Salsa

This is a doubled recipe so you could half it. 

9 pounds of ripe roma tomatoes
2 jalapeno peppers (seeds in or out depending on how hot you want it!)
3 large banana peppers (or red pepper or green pepper.....)
6 small-medium onions ( or 2 large)
2 tablespoon cumin
1 1/2 cup vinegar     1 cup=250 ml
2 Tablespoons sea salt (and then to taste)
6 HEADS of garlic (like A LOT of garlic) chopped
2 bunches of cilantro (optional...)

chop all (peppers and onions finely)
put in pot
bring to boil over medium heat
stir occasionally
boil gently for 60 minutes or until consistency is right (sometimes 3 or 4 hours.....)
taste for more salt or more jalapenos etc.

Can (water bath 15 min)
 
Any mix of peppers works great
